Celebrating British Asparagus Season —Grown Slowly, Picked at its Peak
British asparagus season is here! This beloved crop has been cultivated in the UK since the 16th century, and each year we eagerly await its arrival to mark the beginning of Summer.
We have worked with Clive Martin from Bedlam Farm in Cambridgeshire for many years now. His organic asparagus thrives in the rich, peaty soils of the Fenland. Clive takes a long-term approach to farming, focusing on biodiversity and recently initiating a 25-year pond project to restore unused woodland areas for the endangered Great Crested Newt and other local wildlife.
Like all great things, asparagus requires time and patience. It can take up to four years for a plant to mature enough to produce edible spears. The spears that we enjoy are the tender young shoots of a perennial lily, which are available for a short time each year as the British asparagus season runs from late April to the end of June.
Join us at the table to savour this fleeting crop at its best; we have spaces available this week.
Yours,
The Team at Where The Light Gets In
